Zucchini and Feta Salad

500g small zucchini
1 medium Spanish (red) onion
1 generous clove garlic, finely chopped
1 Tbsp extra virgin olive oil
100g gourmet feta in olive oil (or plain feta chopped
into small pieces)
50g pine nuts
50g currants
2 tsp balsamic vinegar
Salt and pepper

Cut zucchini into 1 cm slices.
Toast pine nuts in dry frying pan until just browned.
Remove from pan.
Lightly cook zucchini slices in the olive oil over medium heat.
Remove from heat.
Toss all ingredients together.
