Chicken, Tortellini & Spinach Soup

9 ounces cheese tortellini
4 cups spinach leaves, cleaned, stemmed & packed
1 teaspoon olive oil
1 medium onion, finely chopped
2 medium garlic cloves, minced
3 medium carrots, coarsely chopped
2 cups cooked chicken breast halves, diced in 1/2" pieces
14 ounces chicken broth
2 cups water
1/2 teaspoon dried basil
1/4 teaspoon freshly ground black pepper
Parmesan cheese, freshly grated

Bring a medium-size pot of water to the boil, add the tortellini and
cook according to package directions. Drain

Roll up about 6 spinach leaves at a time and cut into thin shreds with
a kitchen scissors. Set aside.

In a large pot, heat the olive oil over medium heat. Add the onion,
garlic and carrot. Cover the pot and cook 5 minutes, stirring
occasionally. (if the vegetables begin to stick to the bottom of the
pan, add a tablespoon or so of water.)

Add the chicken, broth, water, basil, salt and pepper. Simmer,
uncovered, 5 minutes.

Stir in the cooked tortellini and the spinach; simmer an additional 5
minutes, or until the spinach has softened.
