Cheesy Potato Casserole Recipe


Nothing is better then a casserole so I always bring them to church suppers and potlucks. This is the one I bring when I am asked to bring a side. It is so cheesy and delicious.—Mae Taylor, Indianapolis, Indiana


    Prep: 25 min.
    Bake: 50 min.
    Yield: 10 Servings


Ingredients

    9 medium potatoes (about 3 pounds)
    1 package (16 ounces) process cheese (Velveeta), cubed
    1 cup chopped onion
    2 cups mayonnaise
    1/2 pound bacon, cooked and crumbled, divided


Directions

    Cook potatoes in boiling salted water until tender. Drain and cool. Peel and cube potatoes; combine with cheese, onion, mayonnaise and half of the bacon in a large bowl. Spoon into a 13-in. x 9-in. baking dish. Sprinkle with remaining bacon. Bake, uncovered, at 350° for 50 minutes or until the top begins to brown. Yield: 10 servings.

Nutritional Facts 1 serving (1 cup) equals 669 calories, 50 g fat (13 g saturated fat), 51 mg cholesterol, 911 mg sodium, 39 g carbohydrate, 3 g fiber, 15 g protein.
