HOT BACON DRESSING

8 slices applewood bacon, chopped
1/4 cup light brown sugar
2 tablespoons cider vinegar
Salt to taste

Cook the bacon over medium heat, stirring constantly, until crispy.
Remove from the pan to a paper towel to drain, leaving behind the bacon
fat. In a small bowl mix the sugar and vinegar and salt until the sugar
dissolves. Add the mixture to the bacon fat and heat on a low flame
until warmed through. Pour over dandelion, spinach or mache.
