DIABETIC GREEK CHICKEN CHOP SALAD

Yield: 4 servings

INGREDIENTS

10 cups chopped Romaine lettuce
1 cup diced plum tomatoes
1 cup diced seeded cucumber or coarsely chopped marinated artichoke hearts
2 cups diced grilled chicken breast
1/2 cup chopped red onion
1/4 cup finely chopped fresh parsley
1/2 cup crumbled reduced-fat feta cheese
3/4 cup canned garbanzo beans, rinsed and drained
1/4 cup sliced black olives
1/2 cup light olive oil vinaigrette salad dressing

DIRECTIONS

Layer all of the ingredients except for the salad dressing in a large bowl.
Pour the dressing over the top and toss to mix well.
Serve immediately.
