APPLE SAUERKRAUT SALAD

1 pint canned sauerkraut, rinsed and drained
3/4 cup chopped green and/or red bell pepper
1/2 cup chopped celery
1/2 cup coarsely grated carrot
1/2 cup thinly sliced red onion
1 teaspoon celery seeds
1/2 cup salad oil
1/3 cup water
2/3 cup vinegar
3/4 cup sugar
1/4 teaspoon freshly
Ground pepper
1 red-skinned apple, unpeeled, chopped

Combine kraut, peppers, celery, carrot, onion, and celery seeds in large bowl. Combine oil, water, vinegar, sugar, and pepper in small bowl; whisk until sugar is dissolved. Pour over kraut mixture. Refrigerate overnight. Just before serving, stir in chopped apple.
