Blackened Chicken Berry Salad

Ingredients

·                               1 small chicken breast blackened, cooked, chopped into bite size pieces

·                               1 cup mixed baby salad greens

·                               1/4 cup blackberries

·                               1/4 cup raspberries

·                               1/2 cup bite size tomatoes

·                               2 tablespoons walnuts

·                               1 tablespoon sunflower seeds

·                               2 tablespoon Feta cheese

·                               1 boiled egg, sliced

 

Instructions

1.                       Cut the raw chicken into bite size pieces. Season it well with blackening and sauté it in a hot skillet.

2.                       Layer the lettuce, tomatoes, walnuts, sunflower seeds, and Feta cheese.

3.                       Add fresh ground pepper.

4.                       Add the chicken and sliced boiled egg.

5.                       Fresh raspberries, blackberries or both.

6.                       Serve with your favorite dressing.

Ingredients

·                               COPYCAT OUTBACK RANCH DRESSING

·                               1 teaspoon Hidden Valley Ranch salad dressing mix (Buttermilk Recipe) - I used the entire 1 ounce package.

·                               1 cup mayonnaise

·                               1/2 cup buttermilk

·                               1/4 teaspoon coarse grind black pepper

·                               1/8 teaspoon paprika

·                               1/8 teaspoon garlic powder

·                               INGREDIENTS TO ADD TO THE RANCH TO MAKE CAYENNE RANCH

·                               1 tablespoon Hot Sauce

·                               1/4 teaspoon Cayenne pepper

Instructions

1.                       Instructions

2.                       Combine all the ingredients in a medium bowl and mix well.

3.                       Seal in an airtight container. I use a mason jar.

4.                       Refrigerate for at least 30 minutes.
