Cucumber Dressing

Yield: 32 fluid ounces

1 1/8 pounds European cucumbers, peeled and seeded
12 fluid ounces Sour cream
3 fluid ounces Lemon juice, freshly squeezed
3/4 ounce Dill, minced
3/4 ounce Sugar
1/2 teaspoon Salt
1/8 teaspoon White pepper, ground
1/8 teaspoon Tabasco sauce

1. Peel the cucumbers and grate them coarsely. Squeeze out any excess water.

2. Add the sour cream, lemon juice, and dill. Blend until just incorporated.

3. Adjust the seasoning with sugar, salt, pepper, and Tabasco. Serve immediately or refrigerate for later service.
