DILL AND CHILL SHRIMP

Ingredients
  • 1 (12 ounce) package frozen cooked jumbo shrimp, thawed
  • 1 small onion, thinly sliced
  • 1 (5 ounce) can sliced water chestnuts, drained
  • 1/3 cup reduced-fat Italian dressing
  • 2 tablespoons chopped fresh dill
  • 1 head romaine lettuce, chopped
  • 2 tomatoes, quartered
Instructions
  1. In a medium bowl, combine shrimp, onion, water chestnuts, Italian dressing, and dill; mix well. Cover and chill 2 hours, or until well chilled.
  2. Evenly divide lettuce among 4 plates. Top with shrimp mixture and garnish with tomato wedges. Serve immediately.
