Christmas Zucchini Salad

Colorful and healthy. Can be made up to 3 days in advance.

10 Servings


3 large Celery; ribs, chopped2 cloves Garlic; crushed
1 large Green pepper; chopped1 1/2 teaspoon Parsley; dried
4 medium Zucchini; unpeeled, chopped1 teaspoon Sea salt
4 Green onion; chopped1/4 teaspoon Pepper
3/4 cup Wine vinegarCherry tomatoes; optional
3/4 cup Extra Virgin Olive Oil

Combine vegetables and marinade in a tupperware bowl or bowl with a tight fitting lid. Marinade overnight or until ready to serve, turning bowl over from time to time. Place drained salad in glass bowl and garnish with: red cherry tomatoes.
