Family Favorite Clam Chowder
Serves 8

3 to 4 c. potatoes, peeled and cubed
1 c. onion, diced
1 c. celery, diced
6 1/2 oz. can minced clams, drained and juice reserved
8 oz. bottle clam juice
3/4 c. butter
3/4 c. all purpose flour
1 quart half-and-half
1/2 t. sugar
1 1/2 t. salt
1/8 t. pepper


Combine potatoes, onion and celery in a large saucepan; add reserved clam juice and bottled clam juice.  Add just enough water to cover vegetables; bring to a boil over medium heat.  Reduce heat; simmer, covered, 10 to 15 minutes or until vegetables are tender.

Melt butter in a separate saucepan over medium heat; whisk in flour and cook one minute.  Add half-and-half, sugar, salt and pepper; cook over low heat 3 to 4 minutes, whisking until smooth.  Stir into vegetable mixture; add clams and cook 5 minutes or until thoroughly heated.
