APPLE SALAD WITH HONEY - YOGURT

DRESSING 

 

3 Granny Smith apples, unpeeled and diced

2 stalks celery, thinly sliced

1 lg. carrot, scraped and shredded

1/2 c. golden raisins

1/2 c. coarsely chopped pecans, toasted

Honey-Yogurt Dressing

Lettuce leaves

 

Combine apples, celery, carrot, raisins, and pecans in a large bowl. Pour Honey-Yogurt Dressing over apple mixture; toss gently to combine. Cover and chill

2 to 3 hours. Serve salad in a lettuce-lined salad bowl.

 

Makes 6-8 servings.

 

HONEY - YOGURT DRESSING:

 

1/2 c. plain yogurt

2 tbsp. vegetable oil

2 tbsp. honey

1 tbsp. white wine vinegar

1 1/2 tsp. Dijon mustard

1/8 tsp. salt

1/8 tsp. pepper

 

Combine all ingredients in a small bowl and stir well with a wire whisk.

 

Makes 3/4 cup.
