APPLE PIE SOUP

This is a spiced dessert soup that is best served cold, in chilled bowls.

Makes 8 servings

1-1/2 teaspoons cinnamon
1 teaspoon ground cloves
1 teaspoon allspice
1 teaspoon ground nutmeg
3 cups water
3 cups apple cider
4 large Granny Smith (or other tart apples), peeled, cored, sliced
2/3 cup raisins
2 tablespoons fresh lemon juice
4 tablespoons honey
2 tablespoons brandy (optional)
1 cup vanilla yogurt
Apple slices or chopped nuts, for garnish (optional)

To make soup: In slow cooker, combine cinnamon, cloves, allspice,
nutmeg, water, cider, apple slices and raisins. Cover. Cook on low for
6 hours or until apples are quite soft.

To puree soup: Using immersion blender or in batches in blender,
process soup until all apple solids and most of raisins are pureed.
Stir in lemon juice, honey and brandy.

To chill: Chill for several hours.

To serve: Just before serving, whisk in yogurt. Serve in chilled
bowls. Garnish with apple slices or chopped nuts.

Nutrition information: One serving provides 194 calories, 2 grams
protein, 47 grams carbohydrates, trace fat, 2 milligrams cholesterol,
32 milligrams sodium, 2 grams fiber, 39 grams sugar, 3 percent
calories from fat.
