SWEET POTATO SALAD

Makes 8 – 10 servings

2 Lbs Sweet Potatoes

1-1/2 Cups Mayonnaise

2 tsp Dijon Mustard

1/4 tsp Salt

4 Hard-cooked Eggs, chopped

1/4 Cup Celery, finely chopped

6 - 8 Green Onions, sliced

In large saucepan, with enough water to cover, arrange whole sweet potatoes; cover and boil over low heat until the potatoes test done (pierces easily with fork tines), about 30 - 45 minutes. Drain and cool.

When potatoes are cool, peel and dice; set aside. In mixing bowl, combine mayonnaise, mustard and salt. Stir in eggs, celery and onions.

Then fold in sweet potatoes and gently stir to combine. Cover and refrigerate until ready to serve (tastes best if you give it several hours to chill and flavors to marry).
