Hot Bacon Dressing Recipe



You get an explosion of flavor in this satisfying hot dressing that's perfect for strong-flavored greens like spinach, notes Connie Simon from Reed City, Michigan.

Ingredients

    3/4 pound sliced bacon, diced
    1/2 cup chopped onion
    1 cup cider vinegar
    2 cups water
    1-1/2 cups sugar
    1 jar (2 ounces) diced pimientos, drained
    2 tablespoons Dijon mustard
    1 teaspoon salt
    1/4 teaspoon pepper
    3 tablespoons cornstarch
    2 tablespoons cold water


Directions

    In a large skillet, cook bacon until crisp; remove bacon and set aside. Drain, reserving 2 tablespoons drippings in the skillet. Add onion and saute until tender; remove from the heat. Add the vinegar, water, sugar, pimientos, mustard, salt, pepper and bacon; mix well.
    Combine cornstarch and cold water; stir into skillet. Cook and stir until mixture comes to a boil. Boil for 2 minutes, stirring constantly.
    Serve warm over fresh spinach or mixed greens. Refrigerate leftovers and reheat before serving. Yield: about 4 cups.

Ingredients

    1/3 cup canola oil
    1/4 cup honey
    2 tablespoons cider vinegar
    2 teaspoons poppy seeds
    1/2 teaspoon salt


Directions

    In a small bowl, whisk all the ingredients. Serve over a green salad or fresh fruit. Store in the refrigerator. Yield: about 2/3 cup.

This recipe originated with my Aunt Mazie, a wonderful cook from West Virginia. I like this dressing because of its versatility. It's wonderful with potatoes, macaroni, hot or cold sliced meat or vegetables. I've shared it with many friends and have had it published in several fund-raising cookbooks.

    Prep: 15 min. + chilling
    Yield: 36 Servings

Ingredients

    1/2 cup butter
    1 cup vinegar
    3 eggs, lightly beaten
    1-1/2 teaspoons celery seed
    1 teaspoon salt
    1/4 teaspoon white pepper
    2 cups mayonnaise
    3/4 cup Italian salad dressing
    1/2 cup sugar

Directions

    In a saucepan, melt butter. Meanwhile, combine vinegar, eggs, celery seed, salt and pepper. Gradually add to butter, stirring constantly. Cook and stir over medium heat for 5 minutes or until slightly thickened and a thermometer reads 160°.
    Remove from the heat and allow to cool. Mix in mayonnaise, Italian dressing and sugar. Cover and chill for at least 1 hour. Serve over coleslaw, vegetables or pasta. Yield: 4-1/2 cups.

    1/2 cup vinegar
    1/2 cup sugar
    3 tablespoons olive oil
    1 teaspoon celery seed
    1/4 teaspoon salt
    1/8 teaspoon pepper


Directions

    In a jar with a tight-fitting lid, combine all ingredients; shake well. Store in the refrigerator. Yield: 3/4 cup.

Ingredients

    2 tablespoons Dijon mustard
    1/3 cup tarragon vinegar
    Fresh ground pepper to taste
    1/2 teaspoon sugar
    1 cup olive oil
    2 tablespoons minced fresh dill or 2 teaspoons dill weed


Directions

    In a small bowl, whisk the mustard, vinegar, pepper and sugar. In a fine stream, drizzle oil into mixture, whisking constantly (dressing will thicken). Stir in dill. Serve with salad greens. Yield: 1-1/2 cups.
