Black Bean and Rice Salad

Served hot or chilled...this is the perfect easy-to-prepare salad or side dish.
Makes 4 Servings

1 cup Minute® White Rice, uncooked
1 can (15 oz.) black beans, drained and rinsed
1 medium red pepper, cut into thin strips
1/2 cup fat free peppercorn ranch dressing
2 green onion, thinly sliced
1/4 cup cilantro, chopped
1 tsp ground cumin

Prepare rice according to package directions.
Place rice in large bowl.
Add remaining ingredients; mix lightly. Cover.
Serve at room temperature or chill several hours before serving.
Substitute: Prepare as directed, substituting chopped parsley for the cilantro.
