{soups-salads-and-salad-dressings} Fall harvest salad bowl

Fall harvest salad bowl

This is a Sierra-inspired salad and hot beverage for fall.

FRESH SIERRA-INSPIRED SALAD

1 cup kale, chopped

1 cup baby spinach, chopped

1/4 cup walnuts or pecans, chopped

1/2 cup fresh berries (strawberries or cranberries — yes! They're tart but good)

2 tablespoons sliced red onion (optional)

Parmesan cheese, shavings or shredded

Vinaigrette: You can buy a fruity all-natural bottled dressing or make your own.

Mix 1/2 cup olive oil

3-4 tablespoons red wine vinegar

1/2 teaspoon Dijon mustard

and a bit of honey and dash of pepper

Chill in fridge.

In a bowl, combine greens, top with nuts, berries, onion, and cheese. Whisk up and drizzle dressing over your salad mixture. The salad bowl serves one to two people.

OK, I know a clean salad with real food isn't a pumpkin pie or apple cake with cream cheese frosting. Pair your greens with a mug of hot apple cider with a cinnamon stick. Or, brew a cup of cinnamon or vanilla flavored coffee, add organic low-fat milk and, if you really want a treat, put a dollop of whipped cream and sprinkle it with pumpkin pie spice or cocoa powder.

The bottom line: Fall doesn't have to be the time to pack on pounds or be sedentary. The more you get used to eating a healthful salad with fall time fruits and vegetables, the more energized you'll feel, and it will help keep seasonal change (cold, flu) woes at bay so you can go do it — outdoors and indoors.

{soups-salads-and-salad-dressings} Ground Beef Recall!

https://clark.com/consumer-issues-id-theft/recalls/recall-ground-beef-sold-at-sams-club-target-aldi-linked-to-e-coli/?utm_source=Clark+Newsletter+List&utm_campaign=002c86ca5e-Clark_Daily_Newsletter&utm_medium=email&utm_term=0_afa92deb83-002c86ca5e-72535429

Ground beef sold at major retailers Sam’s Club, Target, Aldi and more is being recalled because of an E. coli outbreak,  according to the U.S. Department of Agriculture.

The recall was issued on September 19 by Cargill Meat Solutions, a Fort Morgan, Colorado-based processor. The recall involves more than 132,000 pounds of ground beef sold at some of America’s most popular stores.

Recall: 132,000 pounds of ground beef may be linked to E. coli outbreak

“The products subject to recall bear establishment number ‘EST. 86R’ inside the USDA mark of inspection. These items were shipped to retail locations nationwide,” the USDA says in a news release.

The USDA released this list of major retailers where the meat may have been sold:

Store

Location

Aldi

Iowa, Illinois, Kansas, Minnesota, Missouri, Nebraska, Oklahoma, and Wisconsin

FoodMaxx

California

Meijer

Nationwide

Pak N Save

California

Safeway/Albertson’s

Nationwide

Sam’s Club

Nationwide

Target

Nationwide

Vons Stores

California

Regional and local retailers can be found here.

The USDA is concerned that many people have the recalled meat products in their freezer. If you do have ground beef you’ve bought recently, please check it against the establishment number listed above.

“Consumers who have purchased these products are urged not to consume them,” the USDA says. “These products should be thrown away or returned to the place of purchase.”

Consumers with questions are encouraged to use the FSIS’s virtual representative “Ask Karen” feature at AskKaren.gov. People can also call the USDA Meat and Poultry Hotline at 1-888-MPHotline (1-888-674-6854) from 10 a.m. to 6 p.m. ET Monday through Friday.

{soups-salads-and-salad-dressings} Classic Beef Stew

Classic Beef Stew

Be SURE to read the blog entry as it has many great tips on making this yummy fall classic.

https://houseofyumm.com/classic-beef-stew/?utm_source=ActiveCampaign&utm_medium=email&utm_content=Classic+Beef+Stew&utm_campaign=RSS+Feed+1

Classic Beef Stew. Melt in your mouth tender bits of beef simmered in a thick, flavorful broth. Loaded up with chunks of potatoes and carrots. This classic beef stew will warm your soul from the inside out.

Prep Time: 10 minutes

Cook Time: 90 minutes

Total Time: 1 hour 40 minutes

Yield: 8

Category: stew

Method: stovetop, slow cooker

I NGREDIENTS

2 pounds chuck roast (or other meat as mentioned above: brisket or short ribs)

1/4 cup all purpose flour

1 teaspoon salt

1 teaspoon black pepper

2 tablespoons oil (olive oil, vegetable, canola oil, or bacon fat if you have any on hand!)

1 cup dry red wine (Merlot, Pinot, Shiraz, Cabernet Sauvignon)

3 cups no sodium beef broth

2 bay leaves

1 small yellow onion diced

2 carrots peeled and sliced

2 stalks of celery sliced

3 yellow gold potatoes peeled and chopped

salt and pepper to taste

fresh parsley- optional topping

INSTRUCTIONS

Cut the chuck roast into 1 inch pieces. In a medium size bowl combine the flour, salt, and pepper. Stir to combine. Add the meat and stir to coat the meat completely.

Heat the oil in a large Dutch oven, or large pot. Add the meat in batches. Don’t over crowd the pan. Cook the meat, searing on all sides. Cook each side about 30-45 seconds. Remove the meat to a plate or cutting board once seared. Continue until all meat is seared.

Pour the wine and beef broth into the pot, it will sizzle because the pot is still hot. Use a wooden spoon (so you don’t damage the pot) and scrape the bottom of the pan to remove all the bits from searing the meat. Once all the bits are removed you can add the meat back into the pot, along with the bay leaves and onion. Bring to a simmer. Cover. Let simmer about 40 minutes.

Remove the lid, stir the stew. At this point we can add the carrots, celery and potatoes. Continue to simmer for another 30-40 minutes. Check the meat, it will become very tender and you will be able to easily break it apart. Also check that the potatoes are tender.

Skim any extra fat off the top of the stew. Add salt and pepper as needed to the broth to taste.

Serve and top with fresh parsley if desired.

NOTES

IF making this as a SLOW COOKER BEEF STEW:

• Treat the meat the same way, coat with flour, salt and pepper. Sear. Deglaze the pan with the wine and broth. Add the meat and the broth, with all the flavorful bits from the pot into the slow cooker (affiliate link). Add the bay leaves and onion.

• Cook on low for 6 hours.

• Add in the carrots, celery and potato. Continue to cook on low for another 45-60 minutes.

• Serve warm, top with fresh parsley if desired.

If you prefer not to use wine, substitute with 1 cup of beef broth.
