{soups-salads-and-salad-dressings} Slow Cooker - Good Ol' American Beef Stew

 

Good Ol' American Beef Stew
Serves: 6

2 pounds beef stew meat, cut into 1 1/2 inch cubes
1/2 cup flour
2 tablespoon oil
1 bay leaf
1 tablespoon Worcestershire sauce
1 onion, chopped
1 cup beef bouillon
1/4 teaspoon pepper
2 teaspoon salt
1 teaspoon sugar
6 carrots, peeled and sliced or quartered
1 cup sliced celery
4 potatoes, peeled and cut into eighths
12 small white onions
2 medium turnips, peeled and quartered (optional)
4 cups water
1 cup cooked okra (optional)

Coat meat with flour; set excess flour aside.

In large skillet or slow-cooking pot with browning unit, heat oil. Brown meat on all sides.

In slow-cooking pot, combine browned beef, bay leaf, Worcestershire sauce, chopped onion, bouillon, pepper, salt, sugar and vegetables. Pour water over all. Cover and cook on low 8 to 10 hours.

Turn control on high. Thicken with flour left over from coating (about 1/4 cup) dissolved in a small amount of water.

Add okra if desired. Cover and cook on high 10 to 15 minutes or until slightly thickened.

Peasant Stew

6 servings

1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
6 chicken thighs (about 1 1/2 pounds), skinned
1 cup chopped onion
1 (14.5-ounce) can Mexican-style stewed tomatoes with jalapeño peppers and spices, undrained
1 (4.5-ounce) can chopped green chiles, undrained
1 (15-ounce) can pinto beans, rinsed and drained
1 (15-ounce) can kidney beans, rinsed and drained
1/4 cup minced fresh cilantro
1/4 cup reduced-fat sour cream

Combine cumin, salt, and pepper; sprinkle over chicken.
Place chicken in an electric slow cooker; stir in onion, tomatoes, and chiles. Cover with lid; cook on high-heat setting for 3 hours. Stir in beans. Cover; cook on high-heat setting 1 hour.
Place 1 chicken thigh in each of 6 soup bowls; ladle 1 1/4 cups stew into each bowl. Top each serving with 2 teaspoons cilantro and 2 teaspoons sour cream.

Curried Lentil-Tomato Soup

Yield: 6 servings (serving size: about 1 cup soup and 2 teaspoons bacon)

4 center-cut bacon slices
1 1/2 cups chopped sweet onion (1 onion)
4 garlic cloves, finely chopped
3 cups fat-free, lower-sodium chicken broth
1 cup dried lentils
1/2 cup chopped carrot
1/2 cup chopped celery
2 teaspoons curry powder
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
2 (14.5-ounce) cans no-salt-added stewed tomatoes, undrained
1/2 cup half-and-half
2 tablespoons dry sherry

1. Cook bacon in a large nonstick skillet over medium heat until crisp. Remove bacon from pan; crumble. Add onion and garlic to drippings in pan; sauté 3 minutes. Transfer onion mixture to a 4-quart electric slow cooker. Stir in broth and next 7 ingredients (through tomatoes). Cover and cook on LOW for 8 hours.
2. Stir in half-and-half and sherry. Ladle soup into bowls; sprinkle with crumbled bacon.

Kale and Potato Soup with Turkey Sausage

Sodium: 647 mg (will vary by brand of broth you use)
Ingredients:
14 oz reduced fat Italian chicken or turkey sausage
8 cups (1/2 batch) kale, stems removed, leaves shredded
1 tsp olive oil
1 onion, chopped
1 medium carrot, sliced
4 cloves garlic, chopped
8 cups fat-free reduced-sodium chicken broth
2 cups water
3 medium red potatoes, peeled diced into 1/4 inch pieces
1 pinch dried red pepper flakes
salt to taste
1/4 tsp fresh ground pepper
Directions:
In a large Dutch oven or pot, cook sausage over medium-low heat. Turn and cook until brown, about 10 minutes. Remove from pot, let cool and cut into thin slices.
Add oil to pot, add onions and carrots; cook on medium until translucent, about 5 minutes. Add garlic and cook 1 minute more.
Add broth, water and black pepper, bring to a boil and cook 5 minutes. Add cooked sausage, potatoes, red pepper flakes and bring back to a simmer. Cook covered for about 4 minutes. Add kale and bring back to a simmer. Cook partially covered until the potatoes and kale are cooked, about 5-6 minutes. Adjust salt if needed.
Makes 10 cups.

Italian Sausage Kale Soup Recipe

Ingredients

    1-1/2 pounds Italian turkey sausage links, casings removed
    1 medium onion, chopped
    8 cups chopped fresh kale
    2 garlic cloves, minced
    1/4 teaspoon crushed red pepper flakes, optional
    1/2 cup white wine or chicken stock
    1 carton (26 ounces) chicken stock
    1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
    1 can (14-1/2 ounces) no-salt-added diced tomatoes
    1/2 cup sun-dried tomatoes (not packed in oil), chopped
    1/4 teaspoon pepper


Directions

    Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Drain, reserving 1/4 cup drippings; set sausage aside. Saute kale in reserved drippings until wilted. Add garlic and, if desired, pepper flakes; cook for 1 minute. Add wine; cook 2 minutes longer.
    Stir in the stock, beans, diced tomatoes, dried tomatoes, pepper and sausage mixture. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until kale is tender. Yield: 8 servings (2 quarts).

Nutritional Facts 1 cup equals 217 calories, 8 g fat (2 g saturated fat), 51 mg cholesterol, 868 mg sodium, 15 g carbohydrate, 4 g fiber, 18 g protein.

Potato Kale Sausage Soup Recipe


When autumn falls upon Fountain Valley, California, Susan Pursell simmers up this comforting soup. The hearty sausage slices, white kidney beans and colorful kale will keep your gang asking for seconds.

Ingredients

    3/4 cup chopped onion
    1 tablespoon olive oil
    2 garlic cloves, minced
    4 cups reduced-sodium chicken broth
    2 medium potatoes, peeled and cubed
    1/4 teaspoon salt
    1/4 teaspoon pepper
    1 bunch kale, trimmed and chopped
    1 can (15 ounces) white kidney or cannellini beans, rinsed and drained
    1/2 pound reduced-fat fully cooked Polish sausage or turkey kielbasa, sliced


Directions

    In a large saucepan or Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the broth, potatoes, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until potatoes are tender.
    Using a potato masher, mash potatoes slightly. Add the kale, beans and sausage; cook over medium-low heat until kale is tender. Yield: 7 servings.

Nutritional Analysis: 1 cup equals 194 calories, 4 g fat (1 g saturated fat), 14 mg cholesterol, 823 mg sodium, 28 g carbohydrate, 5 g fiber, 11 g protein. Diabetic Exchanges: 1-1/2 starch, 1 lean meat, 1 vegetable.
