Tangy Potato Salad

This recipe is a revelation. Dijon mustard gives body to cooked leeks, making for a velvety dressing with a rich mouthfeel -- no one will miss the fat.

Prep: 20 mins

2 pounds small red potatoes, halved or quartered if large

Coarse salt and ground pepper

1 bunch leeks (about 2 pounds), white and light-green parts only, halved lengthwise, cut into 3/4-inch slices, rinsed well, and drained

2 tablespoons Dijon mustard

1 tablespoon extra-virgin olive oil

2 tablespoons white-wine vinegar

1/4 cup roughly chopped fresh parsley leaves

In a large pot, bring potatoes to a boil over high in salted water. Reduce to a rapid simmer and cook until potatoes are tender when pierced with a knife, 15 minutes. With a slotted spoon, transfer potatoes to a large bowl. Return water to a boil, add leeks, and cook until tender, 10 minutes. With a slotted spoon, transfer leeks to a blender. Add mustard, oil, vinegar, and 1/3 cup water; puree until very smooth. (Use caution when blending hot liquids.)

 

    Add leek mixture to potatoes and toss; season with salt and pepper. Top with parsley and serve warm or at room temperature.

Billie's  cabbage soup
 
2 cups V8
1/2 a package of Cole Slaw Mix
1/4 cup cut up peppers (green, yellow and Red)
1/2 cup cut up Tomato
1/2 a box of Mushrooms
cut the corn off of two mini cobs (last of the corn)
1/4 cup Onion, diced up.
1/2 cup shredded carrots
small piece of ham, diced up (about 4 oz)
2 Grilled Turkey slices, diced up
handful of Snow Pea pods
1 stalk of Celery
4 to 5 rings of sweet banana pepper, plus some of the brine
same amount of Jalapeno Peppers
 2 to 3 tablespoons cocktail sauce
teaspoon of Horseradish
small squirt of spicy mustard.
2 tablespoons of Ginger syrup.
 
Letting it simmer now and will have lunch out of for 3 to 4 days.

WARM POTATO SALAD DIJONNAISE

From Woman's Day

Chunks of baby red and Yukon gold potatoes create a colorful—and tasty—side dish that's spiced just right with Dijon mustard, seasoned rice vinegar, fresh tarragon and scallions.

3 pounds baby red and Yukon gold potatoes, halved (quartered if large)

Kosher salt and pepper

3 tablespoons creamy Dijon mustard

2 tablespoons olive oil

2 tablespoons seasoned rice vinegar

4 scallions, thinly sliced

1 tablespoon fresh tarragon, roughly chopped

Place the potatoes in a large pot and add enough water to cover. Bring to a boil and add 1 tsp salt. Reduce heat and simmer until the potatoes are just tender, 12 to 15 minutes; drain.

Meanwhile, in a large bowl, whisk together the mustard, oil, vinegar, and ½ tsp each salt and pepper.

Add the potatoes and toss to coat. Fold in the scallions and tarragon. Serve warm or at room temperature.
