EASY SOUTHWESTERN PASTA SALAD

DRESSING:
1/2 cup red wine vinegar
1/4 cup honey
4 tablespoons canola oil
4 teaspoons cumin
PASTA SALAD:
1 pound bow tie pasta -- cooked, drained and cooled
1 orange or red bell pepper -- diced
1 green bell pepper -- diced
1 bunch green onions -- chopped
2 cups culantro -- coarsely chopped
2 avocados -- cubed
1 can black beans -- drained and rinsed
1 can corn -- drained and rinsed
1 cup Cojita cheese -- shredded Optional
1. In a small mixing bowl or measuring cup make dressing and set aside.
2. In a large bowl combine all the ingredients, add dressing and toss to combine. Serve immediately or cover and place in the fridge until ready to serve.
