Tuna and White Bean Salad

Serves 4

8 cups shredded iceberg lettuce
1 15-ounce can cannelloni beans, drained and rinsed
1 6-ounce can albacore tuna packed in water, drained
1 tart apple, such as Granny Smith, cored and cut into chunks
2 small ribs celery, diced (about 1/2 cup)
1/4 cup chopped red onion
1/4 cup chopped fresh parsley or 2 teaspoons dried
1 tablespoon fresh sage, or 1/2 teaspoon dried
6 tablespoons olive oil
1/4 cup red wine vinegar
Salt and pepper to taste

In a large bowl, combine the lettuce, beans, tuna, apple, celery, onion,
parsley and sage. Mix together the oil, vinegar, salt and pepper in a
small bowl until well-combined. Drizzle over the salad, toss to combine
and serve.

Option: Serve in a whole-wheat pita or spread on slices of crusty bread.

Nutrition 363 calories; 17 g protein; 26 g carbs; 22 g fat; 6 g fiber;
267 mg sodium.
