Hearty Lasagna Soup
1 pound ground beef
1/4 cup chopped onion
1 teaspoon minced garlic
1/4 teaspoon dried parsley flakes
3 1/2 cups beef broth
1 14.5-ounce can diced tomatoes
1/4 teaspoon dried Italian seasoning, crushed
1 1/2 cups uncooked corkscrew-shaped pasta
1/4 cup grated Parmesan cheese
Cook beef, onion, garlic and parsley in 3-quart saucepan over
medium-high heat 10 minutes or until beef is well-browned, stirring
often. Pour off fat. Stir broth, tomatoes and Italian seasoning in
saucepan and heat to a boil. Stir pasta in saucepan. Reduce heat to
medium. Cook 10 minutes or until pasta is tender. Stir in cheese. Serve
with additional cheese, if desired.
