Zippy Radish Salad

"My husband was skeptical the first time I prepared this salad for him," admits Carol Stevens of Basye, Virginia. "But he loved it! It's zippy and refreshing served with a rich entree or hot barbecue."

Ingredients:
1 cup sliced radishes
1/4 cup cubed Swiss cheese
1 green onion, sliced
1-1/2 teaspoons tarragon vinegar
1/4 teaspoon minced garlic
1/4 teaspoon Dijon mustard
1/8 teaspoon salt
Dash pepper
4 teaspoons olive oil
Leaf lettuce, optional
Directions:
In a bowl, combine the radishes, cheese and onion. In a small bowl, combine the vinegar, garlic, mustard, salt and pepper; whisk in oil until smooth. Pour over radish mixture and toss to coat. Chill until serving. Serve on a bed of lettuce if desired. Yield: 2 servings.
