HEALTHY SALMON AND ROASTED PEPPER CHOWDER
4 servings
2 cups frozen com
2 medium potatoes, peeled, cut into
1/2-inch cubes
2 cups reduced-sodium vegetable broth
2 jalapeño chilies, minced
2 teaspoons minced garlic
1 teaspoon cumin seeds
1 teaspoon dried oregano leaves
12 ounces salmon steaks, cut into 11/2- inch cubes
1 cup chopped roasted red pepper
Salt and pepper, to taste
1 tablespoon chopped parsley
Combine all ingredients, except salmon, roasted red pepper, salt, pepper, and parsley, in large saucepan. Heat to boiling; reduce heat and simmer, covered, 10 minutes. Add salmon and simmer until potatoes are tender and salmon flakes with a fork, about 10 minutes. Stir in roasted red pepper; season to taste with salt and pepper. Serve in bowls; sprinkle with parsley.
