Potato and Celery Soup with Eggs
Makes 4-6 servings
2 c potatoes, peeled and diced
1 onion, diced
3 c water
1 tsp salt
1 tsp pepper
1/4 c celery, chopped
2 Tbsp butter
3 eggs, hard-boiled, peeled and chopped
4 c milk
1 Tbsp fresh parsley, chopped
In a large pot over medium-high heat, combine potatoes, onion, water, salt and pepper. Bring to a boil; boil for 8-10 minutes. Add celery and cook an additional 5-10 minutes, until potatoes are soft. Stir in remaining ingredients and heat through.
