DILL AND CHILL SHRIMP

Ingredients
- 1 (12 ounce) package frozen cooked jumbo shrimp, thawed
- 1 small onion, thinly sliced
- 1 (5 ounce) can sliced water chestnuts, drained
- 1/3 cup reduced-fat Italian dressing
- 2 tablespoons chopped fresh dill
- 1 head romaine lettuce, chopped
- 2 tomatoes, quartered
Instructions
- In a medium bowl, combine shrimp, onion, water chestnuts, Italian dressing, and dill; mix well. Cover and chill 2 hours, or until well chilled.
- Evenly divide lettuce among 4 plates. Top with shrimp mixture and garnish with tomato wedges. Serve immediately.
