Jalapeño Soup For A Crowd
14 oz. well roasted jalapeño peppers
1/2 cup freshly pureed garlic
2 qt. yellow onion
1 qt. green bell peppers
1 qt. red bell pepper
1 lb. cilantro
1 1/2 qt. roma tomatoes
2 gal. warm water
3/4 cup chicken base
12 qt. heavy cream
1/2 cup salt
2 tblspn. white pepper
1/2 lb. butter
4 cup corn starch
3 cup cold water for the corn starch
This recipe makes 6.5 gallons and takes about 40 minutes to make.
