Low Fat Won Ton Soup 101
Servings: 8
1 lb. Ground Turkey
2 Tbsp. each soy sauce, cornstarch & ginger root, fresh, grated
1/4 c. green onions, thinly sliced
1/2 tsp. each salt & black pepper
48 won ton wrappers
1 egg, beaten
3 qt. water (for boiling)
Soup Broth
8 c. chicken stock
1 c. mushrooms, thinly sliced
1/4 c. green onions, thinly sliced
2 tsp. sesame oil
Filling:
Combine ground turkey, soy sauce, ginger, green onions, salt & pepper. Mix well. Add cornstarch & mix. Spoon a tsp. of the filling in the middle of each won ton wrapper. Brush the wrapper edges with the egg mixture to help it stick together.
Won Tons:
Fold one corner over the filling toward the opposite corner, creating a triangle. Fold the top of the triangle down. Fold two sides of the triangle in to meet the top. Press to seal it well. Or, make won ton bundles. Place the filled won tons on a cookie sheet dusted with cornstarch. Cover with a towel to keep them moist until they are all filled & ready to cook. Cook: Heat the water to a boil in a big pot. Drop the won tons in & cook for 4-5 min. They will rise to the surface when they are done. Remove won tons with a slotted spoon. Mix the broth ingred. together in a pot. Bring to a boil & add the cooked won tons. Garnish with thinly sliced green onions.
