{soups-salads-and-salad-dressings} Cheddar Chowder

 

From Cookbook: Church Potluck, Carry-Ins and Casseroles

Cheddar Chowder
Makes 6 to 8 cups

2 c. boiling water
2 c. chopped potatoes
1/2 c. chopped carrots
1/2 c. chopped celery
1/4 c. chopped onion
1 c. ham, cut into cubes
1/4 c. margarine
2 c. milk
1/4 c. flour
2 c. shredded cheddar cheese


In a large pan, combine water, vegetables and ham.  Cover and simmer 10 to 20 minutes or until vegetables are tender.

In saucepan, melt margarine and add flour; stir until bubbly.  Gradually add milk with wire whisk and stir until thickened.  Add cheese and stir until melted.  Pour into vegetable and ham mixture.  Heat for 10 minutes.
