SPINACH PEA SOUP
SERVES 4.
Reserve 1/2 cup peas from 14.4 oz pkg frozen peas. Place remaining peas and 1/4 cup water in a microwave dish. Cover with plastic wrap, pierce to vent. Microwave at high 5 min. Add 2 cups spinach, cover microwave at high 2 min. Drain, rinse with cold water, drain. Heat a skillet. Add 1 1/2 tsp oil to pan. Add 1/2 cup peas and 1 minced garlic clove, saute until peas begin to brown. Set aside. Place spinach mixture, 1 tbs oil, 1 minced garlic clove, 1 cup ice water, 1 tbs chopped mint, 1 tbs lemon juice and 1/4 tsp salt in a blender, blend until smooth. Add 2 tbs half and half, blend until combined. Pour 1/4 cup soup into each of 4 bowls, sprinkle with sauteed peas and 1/4 tsp pepper, then SERVE...
