NUTTY FRUIT SALAD
PEEL and section 1 grapefruit over a bowl, squeeze membranes to extract juice. Set sections aside, reserve 3 tbs juice. Discard membranes. Combine juice, 2 tbs oil, 1/2 tsp sugar, 1/8 tsp salt and 1/8 tsp pepper. Divide 4 cups torn lettuce among 4 plates, sprinkle 1 tbs crumbled feta cheese and 1 tbs toasted walnuts over each salad. Divide grapefruit sections among salads, drizzle with vinaigrette, then SERVE...SERVES 4.
