CARROT - ZUCCHINI SALAD
SERVES 6.
2 tbs each olive oil and lemon juice
1 tsp Dijon mustard
1/4 tsp sugar
2 cups each thinly shaved carrot and thinly shaved zucchini
1/4 cup each thinly sliced onion and parsley
2 tbs torn mint leaves
1/4 tsp each salt and pepper
Combine first 4 ingredients in a bowl, stirring well. Add carrot, zucchini and onion, toss. Sprinkle with herbs, salt and pepper, toss, then SERVE...
