Anise Cream-of-Broccoli Soup

2 tablespoons margarine
1 medium yellow onion -- roughly diced
1 1/2 pounds cooked broccoli -- roughly chopped
1 tablespoon ground aniseeds
2 tablespoons dry white wine
3 quarts vegetable stock
3 cups milk or heavy cream
salt and pepper to taste
grated Swiss cheese

Yield: about 6 servings
1. Melt the margarine in a soup kettle or Dutch oven, and sauté the onion until tender. Add the broccoli, aniseeds and wine. Continue to cook, stirring frequently, for about 10 minutes. Add the stock and milk. Bring to a boil, then reduce to a simmer, cover lightly and cook for about 15 minutes.
2. In the container of a blender or food processor, puree the soup mix, in batches, until smooth.
3. Return to the pot, bring to a boil, and immediately remove from heat. Adjust the salt and pepper to taste, and ladle into soup bowls. Garnish with cheese, and serve immediately.
Hint: Although broccoli is a great flavoring ingredient, sometimes it can be overpowering. The aniseeds in this recipe take away the broccoli's harsh taste and leave a slight licorice taste in the background.
