                         Just Peachy Dessert Soup

  3             pounds  fresh ripe peachess
     1/2           cup  granulated sugar
  1                cup  water or unsweetened apple juice
  3        tablespoons  sugar -- (3 to 4)
     1/4           cup  fresh lemon or lime juice
  1         tablespoon  honey or dark corn syrup
  1           teaspoon  fresh rosemary
  2        tablespoons  sour cream or unflavored yogurt
                        coarsely crushed graham crackers

Summer
Yield: about 6 servings

1. Place the peaches in a large saucepan or soup kettle, cover with hot water, bring to a boil, then reduce to a simmer, and cook for about 7 to 10 minutes. Remove from heat, reserving about 1/2 cup of the liquid. Drain, discarding the liquid, and when cooled slightly, pare the peaches, half, and discard the pit. Set aside.

2. In a clean soup kettle or saucepan, combine the 1/2 cup sugar, and water, bring to boil, and cook, stirring constantly until the sugar is completely dissolved. Add about 6 of the peach halves, reduce to a simmer, and cook for about 10 to 12 minutes. Remove from heat and cool.

3. In a small saucepan, combine the remaining peaches, 3 tablespoons of sugar, lemon juice, honey, and rosemary. Simmer, stirring frequently for about 8 to 10 minutes. Remove from heat. Then in the container of a blender or food processor, puree the mixture, in batches, until smooth. Add the sour cream.

4. Ladle into heated bowls, float the remaining peach halves on the top, cut side down. Drizzle with amaretto dressing, and garnish with coarsely crushed graham crackers.

*Amaretto Dressing*

2 tablespoons peach-flavored yogurt
2 tablespoons amaretto

Blend until smooth. Drizzle over the top of the peaches.
