Susan shared a bunch of salads this past week.
Creamy Broccoli Apple Salad
4 cups fresh broccoli florets (about 2 medium heads)
2 large apples, chopped
1/2 cup shredded carrots
1/2 cup dried cranberries
1/4 cup red onion, chopped
1/2 cup chopped pecans
2 tablespoons lemon juice (about half a lemon)
1/2 cup mayonnaise,
1/2 cup Greek yogurt
1/8 teaspoon pepper
1/4 teaspoon salt
1 tablespoon sugar
In a large bowl, place the broccoli, apples, cranberries, pecans, onion and shredded carrot.
In a smaller bowl, whisk together the mayonnaise, yogurt, salt, pepper, sugar and lemon juice.
Pour the dressing over the salad ingredients and mix until everything is coated.
As you waste your breath complaining about life, someone out there is breathing their last.
Appreciate what you have.
Be thankful and stop complaining.
