I know it’s hot here in the states, but its fall down-under. Besides, I could eat soup every single day!
Cheesy Tavern Soup
I really enjoyed this soup but Mike wouldn’t even try it. Too many vegetables to get past him. Sigh (Jodi would advise putting veggies in the blender to avoid this problem)
This recipe does not have any meat in it and I think that is a shame. The entire time that I was eating I kept thinking how great it would be with ham. I plan to make it again in the future and try it that way.
I am not going to add a picture of it because once it was in the bowl all of the vegetables floated to the bottom and the picture just looked like a bowl of chicken broth. Forget what it looks like. It is delicious.
Cheesy Tavern Soup
4 Tablespoons Olive Oil
1 cup chopped celery
1 cup shredded carrots (I bought them in a bag already shredded to save time)
1 large onion finely chopped
1 medium green pepper, chopped
2 quarts chicken broth
2 (12-ounce) bottles of low carb beer (I used bud light) at room temperature
4 Tablespoons butter
2 teaspoons kosher salt
2 teaspoons black pepper
4 cups Cheddar cheese
Heat oil in skillet, over medium heat until hot. Add all vegetables and sauté until tender. Transfer to crock-pot. Add all but the cheese and place lid on Crockpot. Cook on low for 6 hours.
Add cheese and stir until melted. Serve immediately.
I plan to add ham next time and will add it at the very beginning. This makes 8 servings.
