Chopped Chicken BBQ Salad

Makes 4 to 6 servings

1/2 head lettuce, chopped into small pieces
1/2 of a 15-ounce can of black beans, drained and rinsed
1/2 of a 15.25-ounce can of whole-kernel corn, drained and rinsed
1/2 medium red onion, finely chopped
1 whole boneless, skinless chicken breast, cooked and chopped
1/4 cup ranch dressing
Barbecue sauce to taste
Shredded cheddar for garnish (optional)

Just before serving, toss together lettuce, black beans, corn, onion and
chicken in large bowl. Prepare sauce to taste by starting with 1/4 cup ranch
dressing and adding a little barbecue sauce, to taste. Toss sauce with salad
to lightly coat. Top with shredded cheddar if desired.
