My friend Betty shares her daughter’s potato soup recipe.
POTATO SOUP IN CROCKPOT (TARA'S RECIPE)
INGREDIENTS
6 Large potatoes peeled and cut in pieces (We use yellow potatoes so we use more and we like a lot of veggies and we like our cut into bigger pieces)
1/2 Bag of baby carrots cut in pieces
1 Large onion chopped
1 Quart chicken broth
3 garlic fresh cloves, minced or 1 teaspoon jar minced
1/4 cup butter
2 1/2 tsp salt
1 tsp pepper
1 cup heavy cream (we used a little more)
1 cup shredded sharp cheddar cheese
3 Tbsp. chopped fresh chives (we only use 1 tablespoon of the jar chives)
1 cup sour cream (optional) (we do not use)
1 package prebaked bacon (warmed up for 30 seconds and cut into pieces)
DIRECTIONS
Combine first seven ingredients in a large Crockpot; cover and cook on HIGH for 4 hours or LOW for 8 hours (potatoes should be tender).
Stir in cream, cheese, chives, bacon.
Top with sour cream if desired.
Can make a rue to thicken or mix in instant mashed potatoes to thicken.
