BROWN RICE SALAD

1 2/3 cups uncooked brown rice
1 1/2 cups water
1 cup fat-free sour cream
1 tablespoon red wine vinegar
1 tablespoon lime juice
2 teaspoons honey
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon black pepper
2 slices canadian bacon
1 cup red bell pepper -- diced
1 cup green onion -- chopped
1/2 cup frozen green peas -- thawed
2 tablespoons cilantro -- chopped
1. Place rice and water in a medium saucepan, and bring to a boil. Reduce heat to low, cover and simmer 45 to 60 minutes.
2. In a medium bowl, mix the sour cream, red wine vinegar, lime juice, honey, cumin, chili powder, salt and pepper. Refrigerate until ready to use.
3. Place bacon in a skillet. Cook over medium high heat until evenly brown. Drain, chop up and set aside.
4. In a large bowl, mix the rice, dressing mixture, bacon bell pepper, green onions, peas, and cilantro. Chill at least 1 hour before serving.
