Spicy Mexican Minestrone Stew
Prep Time: 15 min.
Cook Time: 35 min.
INGREDIENTS:
1/2 pound sweet Italian pork sausage, casing removed
2 teaspoons vegetable oil
1 3/4 cups Swanson® Beef Broth or Swanson® Beef Stock
1 can (about 14.5 ounces) whole peeled tomatoes, cut up
1 1/2 cups Pace® Picante Sauce
1/4 teaspoon garlic powder or 1 clove garlic, minced
1 cup uncooked medium shell-shaped pasta
1 package (about 10 ounces) frozen cut green beans, thawed (about 2 cups)
1 can (about 15 ounces) kidney beans, rinsed and drained
Shredded Monterey Jack cheese or mozzarella cheese
DIRECTIONS:
1. Shape the sausage firmly into 1/2-inch meatballs.
2. Heat the oil in a 4-quart saucapan over medium-high heat. Add the meatballs and cook until they're well browned on all sides. Remove the meatballs from the saucepan. Pour off any fat.
3. Stir the broth, tomatoes, picante sauce and garlic powder in the saucepan and heat to a boil. Stir in the pasta. Return the meatballs to the saucepan. Reduce the heat to low. Cover and cook for 10 minutes, stirring often.
4. Stir in the green beans and kidney beans. Cook for 10 minutes or until the meatballs are cooked through and the pasta is tender, stirring occasionally. Sprinkle with the cheese before serving, if desired.
Easy Substitution: Substitute 1 can (about 16 ounces) cut green beans, drained for the frozen.
Time-Saving: For quicker preparation, omit the first step and cook the sausage over medium-high heat until it's well browned, stirring often to separate meat. Leave the sausage in the skillet and pour off any fat. Proceed with the remainder of the recipe as directed.
Makes: 6 servings (about 1 3/4 cups each).

White Chicken Chili Recipe
Folks will enjoy a change from the traditional when they spoon into this flavorful blend of tender chunks of chicken, white beans and just enough zip.
- 10 Servings
- Prep: 15 min.
- Cook: 25 min.
Ingredients
- 1 medium onion, chopped
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 4 boneless skinless chicken breast halves (4 ounces each), chopped
- 2 cans (14 ounces each) chicken broth
- 1 can (4 ounces) chopped green chilies
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 1-1/2 teaspoons cayenne pepper
- 3 cans (14-1/2 ounces each) great northern beans, drained, divided
- 1 cup (4 ounces) shredded Monterey Jack cheese
- Chopped jalapeno pepper, optional
Directions
- In a large saucepan over medium heat, cook onion in oil for 10 minutes or until tender. Add garlic; cook 1 minute longer. Add the chicken, chicken broth, green chilies, cumin, oregano and cayenne pepper; bring to a boil.
- Reduce heat to low. With a potato masher, mash one can of beans until smooth. Add to saucepan. Add remaining beans to saucepan. Simmer for 20-30 minutes or until heated throughly.
- Top each serving with cheese and jalapeno pepper if desired. Yield: 10 servings (2-1/2 quarts).

Dissolve one package Jello in 1 cup boiling water. Pour 1/2 cup into bowl and add 2 tablespoons ice water. Chill until set in ring mold or pretty glass
serving dish. Blend 2 tablespoons sour cream in remaining Jello and pour over gelatin in mold. Chill until set, about 20 minutes. Repeat with each flavor
of gelatin remaining. Pour into mold until ribbon is completed. Makes about 6 cups or Serves 12.

HIDDEN VALLEY RANCH QUICK POTATO SALAD
2 lb. sm. red potatoes, cooked
1/2 c. sliced green onions
1 c. prepared Hidden Valley Ranch original Ranch salad dressing
Paprika or black pepper
Chives
Optional garnish: Crisp- cooked, crumbled bacon
Cut slightly cooked potatoes into 1 inch cubes. In large bowl, combine potatoes, onions and salad dressing; toss gently. Dust with paprika. Garnish with
chives. Serve warm or at room temperature.

FREDA'S LAYERED SPINACH SALAD
1/2 lb. spinach, torn into bite-size bits
2 sm. heads iceberg lettuce (torn bits)
1/2 c. chopped celery
1 (17 oz.) can drained English peas
10 chopped green onions
6 sliced hard cooked eggs
1 lb. bacon, cooked, drained & crumbled
2 c. mayonnaise
1 (8 oz.) carton sour cream
1 (0.04 oz.) pkg. buttermilk Ranch dressing mix
Layer first 8 ingredients in order listed in large salad bowl.
Combine mayonnaise, sour cream, salad dressing mix; mix well. Spread over top of salad, sealing to edge of bowl. Cover tightly and refrigerate several hours or overnight. Mix and serve
Enjoy.

Shortcut Coleslaw
1 can cream of celery soup
1/2 cup mayonnaise
1/3 cup vinegar
2 tablespoons white sugar
1 tablespoon dry mustard
1 teaspoon celery seed or salt
1/2 teaspoon pepper
1 medium cabbage, shredded
2 medium carrots, shredded
In a large bowl; mix soup, mayonnaise, vinegar, sugar, mustard,
celery seed and pepper.
Add cabbage and carrots. Mix well. Chill for at least 2 hours before
serving.
Serves 6
*****Fiesta Cabbage Salad
green cabbage, shredded 3 cup
red cabbage, shredded 3 cup
corn kernels 1 1/2 cup
black beans, drained & washed 1 can
cilantro, chopped 1/2 cup
green onions, chopped 1/2 cup
cherry tomatoes 1/2 cup
olive oil 1 cup
balsamic vinegar 1/2 cup
grainy texture mustard 1 tbsp
fresh lime juice 1 cup
sugar 1/2 tsp
- salt & pepper to taste -
In a large bowl; combine cabbages, corn, cilantro, onion and
tomatoes.
In a covered container; add oil, vinegar, mustard, lime juice, sugar
and salt and pepper; shaking well. Pour dressing over cabbage mixture; blending
well. Chill for at least one hour.
Serves 8

Cabbage Fruit Salad\
1 L green cabbage, shredded 4 cup
2 oranges, peeled & cut into bite size pieces
2 red apples, chopped
1 cup red grapes, seedless & halved if large
1/4 cup currents or raisins/crasins
1/2 cup mayonnaise
1/4 cup milk
1 tablespoon lemon juice
1 tablespoon sugar
1/3 cup toasted pecans, chopped optional
In a large bowl; toss cabbage, oranges, apples, grapes and currents.
Cover and refrigerate.
&obsp; 0 In a small bowl; mix mayonnaise, milk, lemon juice and sugar. Just
before serving; add dressing to cabbage mixture and blend well. Toss in pecans.
Serves 8

1 medium red cabbage, shredded
1 large apple, cored, peeled & diced
1 cup fresh or frozen cranberries
1/3 cup red wine
2 tablespoons red wine vinegar
1 small bay leaf
1 whole clove
1/4 cup white or brown sugar
1 teaspoon salt
1/4 cup butter
1 medium onion, chopped
1 cup water
In a large bowl, mix cabbage, apples, cranberries, red wine, bay
leaf, clove, sugar and salt. (If time permits; mixture can be marinated at room
temperature for 8 hours or overnight.)
In a large pot; heat butter. Add onions and cook until soft but not
brown. Add cabbage mixture and water. Cook until soft. Serve as a side with pork
dinners.

A WINTER FRUIT SALAD
2 c. fresh pineapple chunks
2 firm bananas, peeled, sliced
1 c. pitted dates
1 c. seedless grapes
1 c. sliced oranges
CREAMY DATE DRESSING:
1 c. vanilla yogurt
6 pitted dates
Zest & juice from 1 orange
1 tsp. curry powder (opt.)
For dressing, combine yogurt, 1 teaspoon orange zest, 1/2 cup orange juice, dates and curry powder in blender, blend until smooth. Serve over fruit. Enjoy. Marilyn.

MARDI GRAS SALAD
1 can green) peas
1 can French style green beans
1 1/2 c. diced celery
1 green pepper, diced
1 sm. jar chopped pimento, or 1 red pepper
1 sm. onion, diced
1 c. sugar
1/2 c. vegetable oil
1 tbsp. salt
3/4 c. vinegar
Drain juices from beans, peas and pimento. Mix all ingredients in mixing bowl with cover. (Plastic is best.) Let marinate in covered bowl in refrigerator
at least 12 hours. Serves 4. Enjoy. Marilyn.

* 1 jar (12 ounces) home-style beef gravy
* 1/2 cup sour cream
* 1 package (12 ounces) frozen fully cooked homestyle meatballs, thawed
* Hot cooked egg noodles
Directions
* In a large saucepan, combine gravy and sour cream. Bring to a gentle boil over medium heat; stir in meatballs. Reduce heat; cook, uncovered, for 15-20 minutes or until heated through, stirring occasionally. Serve with noodles. Yield: 4 servings.

* Prep/Total Time: 30 min.
Ingredients
* 2 tablespoons butter
* 1-1/2 pounds beef top sirloin steak, cut into thin strips
* 1/4 cup all-purpose flour
* 1 envelope onion soup mix
* 2-1/4 cups hot water
* 1 can (4 ounces) mushroom stems and pieces, drained
* 1/2 cup sour cream
* Hot cooked noodles
Directions
* Melt butter in a 2-qt. microwave-safe dish; arrange meat evenly in dish. Microwave, uncovered, on high for 4-1/2 minutes, stirring once. Remove meat with a slotted spoon and keep warm.
* Stir flour and soup mix into drippings until blended. Gradually add water, stirring until smooth. Add mushrooms and beef.
* Cover and microwave on high for 13-14 minutes or until the meat is tender and the sauce is thickened, stirring several times. Stir in the sour cream. Serve with noodles. Yield: 6-8 servings.
Editor's Note: This recipe was tested in a 1,100-watt microwave.
Nutrition Facts: 1 serving (1 each) equals 189 calories, 10 g fat (5 g saturated fat), 65 mg cholesterol, 432 mg sodium, 6 g carbohydrate, 1 g fiber, 18 g protein.
