CALDO GALLEGO
A hearty peasant soup popular with hikers, plus how can any soup made with bacon be bad.
1 lb.. bacon ends and pieces
1 large onion, chopped
3 Cloves garlic, chopped
4 Quarts. chicken stock
1 lb. beans, red, white or red, doesn't matter
1 turnip, diced
2 potatoes, peeled and diced
1/2 lb Chorizo sausage, skinned
1 lb. greens torn in pieces
Salt and pepper to taste
Brown bacon in heavy pot, remove and retain 2-3 Tbsp. fat in pan. Add onion and cook for 5 minutes, add garlic for a couple more minutes. Add bacon, stock and beans, cook for 2 to 7 hours until beans are tender. (Can substitute canned beans and reduce cooking time to 30 minutes) Add chopped Chorizo and greens until wilted. Salt and Pepper to taste. Serve with loaf of French or Italian bread, letting diners tear off pieces of bread.
