This is another recipe from Mamie’s cookbook.
2 cans (13 oz. each) chunked chicken breasts (or you could use 3 chicken breasts cooked and diced into chunks….or rotisserie chicken!)
1 can water chestnuts-drained and chopped
1 cup celery-diced
1-1/2 cups (or more if desired) mayonnaise
1-1/2 cups toasted pecans or almonds
1 Tbsp. lemon juice
1 Tbsp. soy sauce
1 tsp. curry powder
Mix all the above ingredients and chill!
