I created this last night using items in the fridge. I keep Bang Bang sauce there as we use it a lot. The chicken was a rotisserie chicken I had from the grocery store
And the cucumber Apple slaw was a Everyday Food/Sarah Carey recipe I had made the night before.
This is a delicious different take on a chicken salad.

Chicken salad
Rotisserie chicken skin and bones removed, then chopped
Add enough bang bang sauce to moisten the chicken
Add the apple cucumber slaw to chicken.
Serve on toasted buns
Bang Bang Sauce
Recipe By: Terry Pogue
Ingredients:
- 1/2 cup mayonnaise
- 1/4 cup Thai-style sweet chili sauce
- 3 dashes Sriracha hot chile sauce, or to taste
Directions:
1. Combine all ingredients. Taste to adjust for heat.
2. Use instead of plain mayonnaise for chicken salad or other salads. Or use as a dipping sauce.
Apple Cucumber Slaw
2 English cucumbers, cut into matchsticks and than diced
1 Granny Smith Apple, peeled, and cut into small dice, same as cucumber
2 scallions, thinly sliced
1 or 2 tablespoons mayonnaise
