Moms' Old Fashioned Chicken Soup

RECIPE INGREDIENTS
DIRECTIONS
3medium chicken breasts/skin on-rinsed under cold water COUPONS |
3 stalks celery-trimmed & washed |
3 carrots-peeled & washed |
1 medium onion-peeled |
3 medium tomatoes or (lg. can DelMonte peeled tomatoes)* |
1 bunch fresh parsley-washed & pinched off stems |
Salt & Pepper to taste as this cooks |
*Use entire can incl. juice |
DIRECTIONS
1/2 fill stock pot with cold water (about 1-2 gals).Add chicken-cook 1 hr. While chicken is cooking, prepare & dice vegetables. Remove chicken when done. Skim water if necessary, & add vegetables. Sligtly cool chicken,remove skin & remove from bones. Dice chicken, & add back to pot. Lower heat & simmer until carrots are done(app. 1 hr). |
Take medium size saucepan,fill 3/4 with cold water & put to boil. Measure 3/4 cup AciniPepe (daVinci or Butoni brand) & cook as directed. Drain macaroni, add soup to ratio desired. Sprinkle Parmaesen cheese on top. Serve with Italian bread, toasted or cheese bread, or rolls. Mangia. Repeat until full. |
