1 cup onion -- chopped
1 cup carrots -- chopped
1 cup celery -- chopped
1/2 pound lean ground beef
1 teaspoon dried basil
1 teaspoon dried parsley
4 cups chicken broth
4 cups potatoes -- chopped
1/4 cup flour
1 cup skim milk
8 ounces cheddar cheese
1/4 cup sour cream
1. Saute onion, carrots, celery, and beef in cooking spary until beef is brown. Add basil, parsley, broth and potatoes. Cover and simmer until potatoes are tender. Blend milk and flour; add slowly to soup.
2. Cover and simmer to thicken. Stir in cheese to melt. Add sour cream and heat through. Do not boil.
