Simple Taco Soup
I LOVE soup but am not particularly fond of Mexican Food. I like Taco salad and Taco Soup. This looks so easy. One of the reviewers panned this because everything was canned. If you watch food network much, you know that canned tomatoes especially are going to “taste” canned unless you cook them a long time. Preferably an hour or more. The cure for the canned taste, cook this soup a long time. Me, I would simmer it on low for over an hour. I make a 30 minute chili recipe that I cook for about 2 hours. The longer with canned foods, the better. PLUS, any vegetable out of a can (ESPECIALLY tomatoes), I add a tsp. of sugar to. It helps very much to enhance the flavor.
We first sampled this chili-like soup at a church dinner. It's a warming dish on a cold day. And since it uses packaged seasonings and several cans of vegetables, it's a simple taco soup to prepare. —Glenda Taylor, Sand Springs, Oklahoma
TOTAL TIME: Prep/Total Time: 25 minutes
YIELD: 8 servings (about 2 quarts).
Ingredients
2 pounds ground beef
1 envelope taco seasoning
1-1/2 cups water
1 can (16 ounces) mild chili beans, undrained
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (15 ounces) pinto beans, rinsed and drained
1 can (14-1/2 ounces) stewed tomatoes
1 can (10 ounces) diced tomato with green chilies
1 can (4 ounces) chopped green chilies, optional
1 envelope ranch salad dressing mix
Directions
In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add taco seasoning and mix well. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes or until heated through, stirring occasionally.
Nutrition Facts: 1 cup: 370 calories, 14g fat (5g saturated fat), 70mg cholesterol, 1369mg sodium, 35g carbohydrate (7g sugars, 7g fiber), 27g protein.
