I bought a box of cookbooks from a lady locally selling about 20 of them for $15. Sunday's at Moosewood Restaurant was in the box. That book alone would cost way more than what I paid for the entire box. (Amazon lists it at over $60! Moosewood is a collective restaurant in Ithaca NY.
The Moosewood Collective is a group of nineteen people who own and operate Moosewood Restaurant and write cookbooks. "Collective" is our group's philosophical identity, not a legal term. Most of us have worked together for more than twenty years and some of us have worked together since Moosewood opened in 1973.
Quite known in the culinary scene.
Autumn Gold Butternut Squash Soup
(Not the EXACT photo, I typed this recipe from the cookbook)
Ready In: 35 Minutes
Serves: 6
Ingredients
1 medium butternut squash
1 large onion, chopped
2 teaspoons vegetable oil
1⁄4 teaspoon nutmeg
1⁄4 teaspoon cinnamon
1⁄4 teaspoon thyme
2 bay leaves
1 medium carrot, diced
2 stalks celery, chopped
1 1⁄2 cups water
1 1⁄2 cups tomato soup
1 cup apple juice
1 cup orange juice
salt and pepper
DIRECTIONS
Cook the squash-I boil it for this recipe and use the broth in place of the water called for.
Sauté the chopped onion in the oil with the spices and bay until onion is translucent.
Add the carrot and celery and the squash water.
Cover and simmer until carrots are tender.
Remove bay leaves Puree the veggies and squash, whisk in juices return to a simmer, taste and add salt and pepper.
As you waste your breath complaining about life, someone out there is breathing their last.
