HEALTHY CROCK POT JAMBALAYA
When you need a warm dish that is healthy, full of flavor and made in the crock pot, this recipe is for you. Healthy Crock Pot Jambalaya is perfect for Mardi Gras or a simple weeknight meal the family will love.

Cook Time: 4 hours 15 minutes
Total Time: 4 hours 30 minutes

Servings: 8 servings
Ingredients
1 Tbsp olive oil
1 lb. skinless boneless chicken thighs, cut into 1-inch pieces
1 lb. skinless boneless chicken breasts, cut into 1-inch pieces
1 large onion chopped
1 green or red bell pepper seeded and chopped
1 cup celery (about 3 stalks) chopped
3 cloves garlic minced
1 lb. turkey smoked sausage cut into 1/4-inch-thick slices
1 Tbsp salt-free Cajun or Creole seasoning
1 tsp dried thyme
1 tsp dried oregano
1/2 tsp smoked paprika
1 oz can diced tomatoes undrained, 14 1/2-
1 oz can diced tomatoes with green chilies undrained, 14 1/2-
2 cups lower-sodium chicken broth
1 3/4 cups brown rice cooked
1 lb large shrimp peeled and deveined
1 Tbsp hot sauce optional
leaves Fresh parsley for garnish
Instructions
Coat inside of crock pot with cooking spray.
Heat oil a large skillet over medium high heat.
Add chicken pieces and cook for 3-4 minutes, stirring often until slightly browned.
Place chicken in crock pot.
In the same skillet add onion, bell pepper, celery, and garlic; sauté 4-5 minutes until crisp tender.
Add onion mixture, turkey sausage, and next 7 ingredients, through chicken broth, to crock pot. Cover and cook on low for 4 hours.
Cook rice according to package directions. Can be done the night before.
Add cooked rice, shrimp and hot sauce to crock pot.
Cover and cook on high 15 minutes or until shrimp are done.
Garnish with parsley leaves, if desired.
