Waldorf Salad
(adapted from Katy’s Korner cookbook, “On The Corner”)
Ingredients:
2 cups apples, diced
1 cup celery, diced (Blech, blech, blech!)
1/2 cup raisins (I left these out)
1/2 cup walnuts, chopped (you can use pecans…..Jodi would!)
1/2 cup mayonnaise
2 tablespoons sugar
1 tablespoon lemon juice
Instructions:
Place diced apples, celery and nuts in a mixing bowl.
In a separate small bowl, add mayonnaise, sugar, and lemon juice. Stir together well.
Pour mayonnaise mixture over the fruit mixture. Stir to combine, making sure all the fruit is covered.
Place in a covered bowl and refrigerate until serving time.
NOTE: Katy added that you can use whipped cream in place of the mayonnaise for a lighter salad.
