Skinny Shrimp Avocado Salad
This Skinny Shrimp Avocado Salad has all of the flavors of summer! The shrimp pairs perfectly with the lime juice, avocado, and fresh ripe tomatoes. It all comes together in just about 10 minutes for the perfect summer salad that is bursting with flavor!
Ingredients
- 1 lbShrimp, cooked and peeled [1]
- 2Medium roma tomatoes, diced
- 1/4 cupDiced red onion
- 1Medium avocado
Dressing
- 2Limes, juiced
- 1 tspOlive oil [2]
- 1/4 tspSalt
- 1/4 tspPepper
- 1/4 tspGarlic powder
- 1 tbsChopped cilantro
Method

In a large bowl combine chopped shrimp, tomato, onion, and avocado.

In a small jar (or sealed container) combine the ingredients for the dressing and shake to combine.

Pour dressing over shrimp salad, add cilantro, and gently toss. Enjoy right away, or marinate overnight and serve the following day.
